I bought a double decker meatloaf pan (so all the fat drains out) at BB&B.

It works good.

It gets a bad rap sometimes but when done even half well it's good filling comfort food. I'm pro-meatloaf.

A few weeks ago, we were over on the western edge of the state between Eau Claire and La Crosse. Pepin, to be precise. Anyway, we stopped in a little roadside coffee house/diner for lunch and I had the meatloaf sandwich special. It wasn't really a sandwich as much as a generous slice of meatloaf on top of a slice of pumpernickel with some sauerkraut, cheese, a drizzling of ketchup and a generous helping of roasted brussels sprouts.

Wow.

Hadn't had meatloaf of any variety since I was a kid, and i was never crazy about the stuff my mom made (sorry, Mom). This stuff was amazing, however, and inspired me to seek out some good recipes for when the weather is brutal and your body demands bulky, hot dinners.

i hate to hijack my own thread but I gots to do it.

I think Meatloaf (the singer) was great on the celebrity apprentice.

He was so damn passionate about everything! From nearly kicking Gary Busey's ass to saying "Thank you Mr. Trump" through tears, he was a very likeable guy.

I worry though...a guy wound that tight...as my dad used to say about older relatives..."I think we're gonna get a call soon"

One of my favorite burgers as a kid was essentially meatloaf on a bun.
Mix ground beef with egg, onion soup mix and bread crumbs. Form into patties as usual and grill.

I had the exact same experience as a kid, even though I liked pretty much anything else she made. I've never been a big fan of the ketchup topping.
Mixing ground pork with beef is a fantastic idea, as is stuffing it(I love me a spinach and mushroom stuffed loaf).

Westside Woodman's had 1.5+ lb ground round on sale for $2.49 last Sunday morning.

I only got 1. And now I'm regretting it.

My advice - if you ever find yourself staring at $2.49 meat, grab all you can get.

I can vouch for the feasibility of delicious vegetarian meatloaf (with cashew gravy) - look no further than Monty's for an easily obtained demonstration. They use the Moosewood recipe, which is a long-standing, excellent vegetarian recipe resource.

Of course not overcooking your meatloaf is important, but I think
the quality of meat is key. I stopped buying meat from Woodmans (sorry bdog) and only go to the butcher for about a year now, and
it makes a ton of difference! I usually freeze what I can't use up in the first couple of days into usable portion sizes and just defrost as
I need it.

How do you top your meatloaf? Cheddar cheese, crunchy onions,
or just let the meat crisp up and douse the slices in ketchup?

I almost always make gravy with meatloaf, so I usually do without a glaze. But, if you need a topping, try bacon. That's the answer to everything.

I love Paul Prudhomme's Very Hot Sauce for Beef over his Cajun meatloaf from the Louisiana Kitchen cookbook. Recipes are online but Chef Paul's website wants to sell seasoning mix -- and it's easy enough to mix up your own. (Also, if chopping up the "holy trinity" do yourself a favor and chop enough for the meatloaf plus the sauce.)

Mixing meatloaf is not for the squeamish (he has you use your hands). But damn, it's good. It burns! It burns!
